Tomato-BabyCorn Curry

When i was in India, i used to cook this curry once in 2 weeks. When i moved here, it has become rare. This is a very tasty and easy recipe similar to tomato curry.

Ingredients:

tomato – 4

baby corn – 8-10

onion – 1

green chillies – 2

salt – 1 tsp

red chillie powder – 1 tsp

oil – 3 tsp

red chillie – 1/2

mustard – 1/4 tsp

chana dal – 1/4 tsp

urad dal – 1/4 tsp

cumin – 1/4 tsp

turmeric – pinch

garlic – 2 cloves

curry leaves – 4

cilantro – 4 sprigs

Method:

Dice babycorn into 3 parts. Chop tomatoes and keep aside. Heat oil, add red chillie, mustard, urad dal, chana dal, cumin, turmeric, garlic, curry leaves and let them splutter. Add onion, slit green chillie and saute them. Now add diced babycorn and cook for 2 mins. Add tomatoes and cook for 5 mins. Add salt, red chillie powder, little water and cook for 4 mins in med flame. Simmer and garnish with cilantro. Enjoy with hot rice or roti.
