Pickle Rice

Whenever i have leftover rice, i keep exploring what i can do differently. This time i wanted to try a pickle tadka. It was so good, nobody can guess it is made of pickle. You can try with any of your favorite pickle. Very simple, different lunch box item.

Ingredients:

leftover rice – 1.5 cups

amla pickle – 3 tsp(choose ur favorite pickle)

salt – 1 tsp

oil – 3 tsp

red chillie – 1

mustard seeds – 3/4 tsp

chana dal – 1/2 tsp

urad dal – 1/2 tsp

cumin – 1/2 tsp

turmeric – pinch

onion – 1/2 thinly sliced

green chillies – 2 slit

curry leaves – 1 sprig

Method:

Mix rice with your favorite pickle along with salt and keep aside. Heat oil in a non-stick pan add red chillie, mustard, chana, urad dal’s, cumin, turmeric, curry leaves and let them splutter. Add onions and green chillies and cook them for 2 mins. Transfer this tadka to rice and mix thoroughly. Enjoy it with pappads or even with raita.
